Vegetables – so healthy but so hard for me to just spontaneously eat. I want to come up with more ideas on how to cook them.
What is your favorite way?
I was cleaning out some papers last week and came across these words that I had copied down:
“I’m still very much in love with tossing them with olive oil then sprinkling with ginger, cumin and chili powder and roasting them. Never though I’d like eating roasted carrots so much.”
I googled the exact words and it brought me back to this post on Not Martha. Apparently I’ve been trying to eat more vegetables for years. I tried cooking the carrots the way she suggested them and they were very tasty!
So give me some more tasty ways to make vegetables!



Not necessarily healthy, but I love veggies with cheese on them. Just had broccoli with a little bit of cheese on it last night and it was so tasty. My kids love the cheese too:).
I roast two pans of veggies every other day but we are mostly vegetarian. Have you tried ratatouille or Hungarian letcho. Both are similar to making chili and heat nicely for days afterwards over rice, vermicelli or noodles. I roast squashes (cubed), sweet potato with shallots, brussel sprouts, green beans, peppers and onions (for tacos or pizza toppings), and eggplant almost weekly because they are favorites. For pumpkins or squash I use cinnamon, nutmeg or allspice for a sweetish flavor for the kids preference. Lawrys or good old garlic, onion power and salt and pepper are good for almost anything. Don’t overlook paprika too. If you get in the habit of roasting twice a week, you will always have side dishes or stuff to throw into a stir try. Braggs is great for seasoning and marinading too and is calorie and dairy and gluten free.
